Rode the stretch from Mazamet down to Carcassonne, wonderful, I agree. But if you are coming Mazamet towards Beziers, consider turning off onto the D908 towards Bederieux. Tight nadgery of the first order.

The whole region is awash with superb bike roads :) Can wait to get back with a less heavily laden bike!

i did the first stretch of this route the d118 over the top from carcassonne to mazamet its worth going out of your way for

A French mathematition called Bezier invented the maths that are used to describe curves. The town of Beziers couldn't be named after him but it made me try the road. We took the D118 up from Carcassonne (after staying in the medieval village) which is itself a fun twisty road, then on to the N112. All 3 of us aggreed it's the best road we've ever been on. One section is dual carriageway beautiful flowing 100+ mph bends. Good surphace, mostly very little traffic, no cops. It just doesn't get any better than this.
